an ode to collard greens
When I was a kid I hated collard greens. My mom would always tell me she hated them when she was younger too, but it changed when she grew up. I knew I would never, ever, ever like collard greens.
Well, years after this I was in college visiting my Mawmaw (that's North Carolina from Grandma) and she made some collard greens. I decided to give them another try and lo and behold, I liked them! I guess my mom was right. Maybe it's like a right of passage or something? Who knows.
If you're from the south then you likely think there's only one proper way to make collard greens and it's probably the way your mom or grandma makes them. But there are tons of ways to incorporate collard greens into your meals! And why shouldn't you? They have a unique flavor and are a great green for you.
